This month, Finnish consumers will find a new product, “pulled rainbow trout,” available in over 500 grocery stores across Finland. This innovation is the result of a collaboration between several Finnish companies, utilizing Hailia’s patented technology to transform typically discarded fish parts—such as bones, heads, and fins—into a new food product.

The process yields a texture similar to cooked fish fillet, making it suitable for both home cooking and industrial food production. According to a press release from the companies involved, this new product offers versatility and a sustainable approach to seafood processing.
