Chef Erick Alonso Ramos Cornejo Joins the Team

Above Eleven Dubai is thrilled to announce the appointment of Chef Erick Alonso Ramos Cornejo as its new Chef de Cuisine. With over 12 years of diverse culinary experience, Chef Erick brings a wealth of knowledge to the Peruvian-Japanese restaurant. He will work alongside General Manager Alex Park, forming a dynamic leadership team dedicated to advancing the restaurant’s culinary journey.

A Culinary Journey from Peru to Dubai

Chef Erick hails from Peru and has built an impressive culinary career across Latin America and the Middle East. He began his journey in Lima, where he honed his skills at the renowned Sushi-ito, specializing in Peruvian Nikkei cuisine, and at the fine-dining establishment Lima 27.

His experience expanded as he served as Sous Chef at La Locanda Restaurant in Quito, Ecuador, where he helped launch a celebrated Mediterranean concept. Chef Erick continued his career in Mexico as Chef de Cuisine at Latin Bistro – Sea Breeze and spent two years specializing in Peruvian cuisine at Ni in Nizuc Resort, Cancun. He also played a key role as Sous Chef during the opening of W Muscat in Oman. Most recently, Chef Erick excelled as Senior Sous Chef at Emirates Flight Catering, crafting menus for first-class passengers.

Chef Erick has received numerous accolades, including the What’s On Award for “Best Seafood Restaurant” at Moana Restaurant in Dubai, along with recognition from the Gourmet International Festival and Latitud Cero Congress.
