This month, Finnish consumers will find a new product, “pulled rainbow trout,” available in over 500 grocery stores across Finland. This innovation is the result of a collaboration between several Finnish companies, utilizing Hailia’s patented technology to transform typically discarded fish parts—such as bones, heads, and fins—into a new food product.
The process yields a texture similar to cooked fish fillet, making it suitable for both home cooking and industrial food production. According to a press release from the companies involved, this new product offers versatility and a sustainable approach to seafood processing.
Jari Korhonen, CEO of Kalavapriikki, expressed enthusiasm about the initiative: “By utilizing these previously unused parts of the fish, we’re not only reducing food waste but also contributing to a more sustainable and profitable seafood industry.”
S Group, a major player in the retail sector, is key to the product’s distribution. Mikko Kovalainen, Sales Manager at S Group, noted, “The pulled rainbow trout is a perfect fit for our product line, and we’re excited to offer it to our customers.”
This partnership marks a significant step towards minimizing food waste while creating innovative protein sources for the market.
