Innovative Dessert Spot Opens in Northbridge
A new dessert bar, Sassy Bing, is set to open its doors in Northbridge, bringing a fresh wave of Thai-inspired sweets to the area. This unique café aims to make a splash with its distinctive menu, which includes an Australian-first vegan-friendly bingsu.
Founder’s Vision
Sassy Bing has been launched by Sasikan Kunakool, a 39-year-old entrepreneur passionate about highlighting Thai flavors in Perth’s dessert scene. Kunakool’s vision is to offer a blend of traditional Thai ingredients with a modern twist.
Vegan-Friendly Bingsu
One of the main attractions at Sassy Bing is its vegan-friendly bingsu. Traditionally a Korean shaved ice dessert made with milk, this version will use coconut milk as a base. This change caters to those with dairy allergies or intolerances, while still honoring traditional Thai flavors. Kunakool explained, “Creating bingsu made from coconut milk pays homage to Sassy’s Thai ethnicity, where coconut milk or coconut cream, sweetened and with a hint of salt, is a common feature of traditional Thai desserts.”
Signature Drinks
Sassy Bing will also offer a creative take on the popular Strawberry Matcha drink. Their version, called Strawberry Cloud Green Tea, will be made using green tea from the renowned Thai tea brand ChaTraMue, complemented by a special “strawberry cloud” topping.
Grand Opening Event
To celebrate its grand opening, Sassy Bing will welcome its first 50 customers on both Saturday and Sunday with a free Thai milk tea. The new dessert bar will be located at 63 Aberdeen St, Northbridge, and will operate daily except Tuesdays.
