Abby and John Hannah are preparing to open their latest restaurant venture, Brown Chicken Brown Cow, where traditional Southern comfort food meets a modern twist. Described as offering “eclectic cuisine,” the restaurant will feature both old-fashioned favorites and elevated versions of Southern classics.
The Hannahs are no strangers to the food industry. In 1998, they founded Shuckers Oyster Bar, a well-loved establishment still thriving today under the management of Abby’s brother, Richard Acquaotta, and his wife, Tasha. Now, the Hannahs are bringing their passion and experience to a new endeavor with Brown Chicken Brown Cow, hoping to deliver not only delicious meals but also a warm sense of community.
A Fresh Take on Southern Dining
Brown Chicken Brown Cow will offer a unique dining experience. Unlike traditional buffets where customers serve themselves, this restaurant will bring food directly to the table in a “family-style” manner. Abby Hannah emphasizes the importance of this approach, especially when it comes to health and safety:
“As a nurse, health and safety concerns are definitely a priority. At Brown Chicken Brown Cow, you can enjoy a Southern buffet ‘family-style’ without being concerned with cleanliness,” Abby explains.
Focus on Family and Fellowship
Beyond great food, the Hannahs are dedicated to creating a space where families and friends can reconnect over a meal, free from the rush of modern life. They hope to bring back the joy of sitting down together, sharing stories, and enjoying each other’s company—just like family dinners used to be. With chefs boasting over 30 years of experience, the couple is eager to share their passion for food and hospitality with the Carroll County community.
A Menu Packed with Southern Comfort Classics
The restaurant will offer a variety of entrees and sides, with unlimited refills, ensuring everyone leaves satisfied. Guests can choose from three entrees and four to five sides, featuring Southern staples like:
- Meatloaf
- Chicken and Dumplings
- Pork Loin
- Pork Chops
- Dressing
- Cube Steak
- Fried and Baked Chicken
Side dishes will include black-eyed peas, collard greens, coleslaw, mac and cheese, mashed potatoes, and more. All items are prepared fresh, promising a flavorful dining experience every time.
Though the menu is already robust, the Hannahs plan to expand it even further, with take-out options also in the works.

You’ll soon be able to visit Brown Chicken Brown Cow at 903 South Park Street, Suite B in Carrollton. The restaurant’s anticipated hours of operation will be:
- 11:00 A.M. – 9:00 P.M. Wednesday to Sunday
- Closed Monday and Tuesday
