Creative Spin on Cantonese Cuisine at Zuan Yuan

by Ella

Innovative Dining Experience in Petaling Jaya

Zuan Yuan Chinese Restaurant, located at One World Hotel in Petaling Jaya, is unveiling a new menu that reimagines traditional Cantonese cuisine. Head chef Teoh Hock Joo and dim sum chef Tan Kai Hin are set to showcase their culinary talents with a range of exciting new dishes designed to delight diners.

Signature Dishes to Savor

One of the standout offerings is the Steamed Tiger Grouper, made with fish sourced from Sabah. The grouper is cut into bite-sized pieces and served on bittergourd slices. It is topped with tangy preserved soybean paste, pine nuts, and thinly sliced scallions and chilies.

“You have to eat all three layers at once to enjoy the spectrum of flavours,” said Teoh. “The different ingredients are meant to work together.”

As this dish requires careful preparation, a one-day advance order is needed.

Next up is the Boiled Shark Bone Broth with Fish Maw, served in a coconut. This broth leaves a delightful sticky sensation, thanks to the collagen in the fish maw, which adds a velvety texture. Teoh explains, “We serve the soup in a hollowed coconut because it imparts a unique flavour.”

Highlighted Delicacies

A dish that deserves special mention is the Giant Freshwater Prawn with Curry Sauce. This dish features prawns rich in orange roe, drenched in a creamy, spicy sauce made from Waugh’s curry powder.

“We chose this specific curry powder for its unique flavour. It’s not commonly used in many local seafood dishes,” Teoh noted. The prawns are firm and sweet, and the sauce, enriched with coconut milk, has a beautiful creamy texture. Deep-fried mantou is included for diners to enjoy with the sauce.

Another personal favorite is the Cantonese Seafood Flat Rice Noodles. These noodles are deep-fried until golden brown, giving them a crispy texture similar to prawn crackers. To maintain this crispiness, the accompanying egg gravy is served on the side and poured on the noodles just before eating.

New Additions to Dim Sum Menu

The dim sum menu also introduces the Honeycomb Cake, known locally as kek sarang semut. This steamed cake features a soft texture and a beehive-like interior. Tan highlights the importance of patience when caramelizing sugar for this dish, saying, “It has to turn brown, close to the colour of chocolates, during cooking.”

Another noteworthy item is the Baked Barbecue Chicken Puff. This pastry boasts a buttery, flaky crust filled with chicken and mushrooms, topped with edible charcoal powder for a smoky flavour. Tan explains, “The crust is made with equal parts butter and margarine, and the charcoal gives it a colour contrast.”

Other new dim sum dishes include Sakura Siew Mai, Abalone Sauce Taro Dumpling, Charcoal Mushroom Pastry, Scallop Dumpling, and Foie Gras Fresh Wantan.

All-You-Can-Eat Dim Sum
