Terroirs, a restaurant dedicated to showcasing Quebec’s local producers, has become the latest must-visit spot in Shops Angus. This friendly and committed neighborhood restaurant offers a culinary experience that highlights the richness of Quebec’s terroir. A Vision Rooted in Local Values

Since its opening on August 1, 2024, Terroirs has offered a unique blend of casual service and gourmet dishes. The owners describe the concept as “fine diner,” blending high-quality cuisine with a relaxed atmosphere.

Terroirs was born from the shared vision of three passionate food enthusiasts: Victor Baumont, formerly of Club Chasse et Pêche, and the duo Marc-Antoine Joncas Zarate and Marcela Urena. Drawing from their backgrounds in Quebec’s culinary landscape, the team wanted to create a restaurant deeply rooted in the region’s rich terroir. After studying Restaurant Management at ITHQ, Marc-Antoine and Victor teamed up to found Collectif Gourmand, a collaborative project aimed at promoting Quebec’s producers through unique farm-to-table experiences. Although that venture has ended, Terroirs continues its legacy, maintaining strong relationships with local producers across the province.

Marcela, who brings her expertise in finance and sustainable management to the project, hopes that Terroirs will become a leader in environmental responsibility. With seating for about 40 guests, the restaurant aims to gradually achieve zero-waste status, making a positive impact on the food system.

“When Marcela suggested this spot between Station W and Boucherie les Épicurieux at Shops Angus, we instantly fell in love,” Marc-Antoine shared. “We loved the energy of the neighborhood, the terrace with our small garden, the high ceilings, and the natural light filling the space.”

Victor humorously added, “For me, it was the pétanque court right in front!”

A Space Transformed

Transforming the location, which previously housed the restaurant Magnolia, required only minor adjustments. A living wall and a few orange accents created a warm atmosphere, setting the stage for Terroirs to establish itself as a culinary destination in the neighborhood.

Celebrating Quebec’s Culinary Treasures

“Our goal is to highlight the treasures of Quebec’s agriculture, fishing, and foraging,” explain the chefs. “We want to celebrate local producers and responsible practices.”

Terroirs focuses on an immersive, nostalgia-infused culinary experience. The menu is crafted around local ingredients from farms like Ferme Villoise, known for its organic pork, and special products like spice blends and sea salt from Sel Saint-Laurent. The chefs also use mushrooms to bring a subtle umami richness to their dishes.

Among the highlights of the menu was a grilled broccoli dish, paired with dill flowers from Coop Pied de Céleri, prepared with the same care as a butter-fed meat dish. The fish course, featuring rockfish in cream and corn relish, was another standout, alongside fresh pasta with Quebec mushrooms. Each dish reflects the chefs’ passion for local ingredients, offering indulgent yet hearty flavors.

Thoughtfully Curated Wines and Cocktails

Marc-Antoine, who gained experience at the wine agency Bambara Sélection, personally curated the wine list. The selections showcase organic and sustainably produced wines, with a diversity of offerings to complement the cuisine. The short cocktail menu includes classics like the Manhattan and Negroni, with fresh Anjou cherries from Marcela’s mother’s garden adding a special touch. A rotating cocktail selection, like the “I Love Peaches” featuring Quebec’s Kepler gin, mirrors the seasonality of the food menu.

A Neighborhood Favorite in the Making

Terroirs appeals to food lovers eager to explore Quebec’s regional culinary culture. With a focus on local products and unpretentious, delicious cuisine, it’s quickly becoming a favorite for neighborhood residents. Guests can opt for the 4- or 6-course experience menu offered in the evening, perfect for those looking to be surprised by the chefs’ creations.
