The Royal Hawaiian Hotel in Waikiki has introduced a fresh culinary experience at its beachfront restaurant, Azure, thanks to the arrival of its new Chef de Cuisine, Jose Reyes. With a revamped menu that highlights local Hawaiian ingredients, Reyes is blending his Spanish heritage with modern techniques to create something unique for diners.
A New Five-Course Pairing Menu
Chef Reyes and Nadine Madera, the restaurant director for both The Royal Hawaiian and Sheraton Waikiki, recently appeared on HNN’s Sunrise to discuss Azure’s new five-course pairing menu. The menu spotlights locally sourced ingredients, including fresh seafood and vegetables from nearby farms.
“The inspiration behind this menu is to blend modern culinary techniques with flavors from my Spanish heritage,” said Reyes, who emphasizes his personal culinary journey through each dish.
Chef Reyes’ Culinary Background
Before joining Azure, Chef Reyes was the executive chef at Umi by Vikram Garg and 53 by the Sea. During his time there, he earned Best Seafood honors at the Honolulu Magazine Hale Aina Awards, solidifying his reputation as an innovative force in Hawaii’s culinary scene.
New Aha’aina Luau Experience
Madera also highlighted changes at The Royal Hawaiian’s Aha’aina Luau. Unlike traditional buffet-style luaus, this experience offers a served meal, giving guests a more intimate dining encounter with Hawaiian cuisine.
Upcoming Truchard Vineyards Pairing Dinner
On October 22, Azure will host a special Truchard Vineyards pairing dinner. The event will showcase a sophisticated selection of wines paired with Chef Reyes’ dishes, which will feature seasonal, local ingredients. This exclusive dinner is designed to offer guests a taste of Hawaii’s finest produce, presented with a creative, international twist.
