Gavroche Combines “New-School” and “Old-School” French Cuisine in Chicago’s Old Town

by Ella

Gavroche, a charming restaurant in Chicago’s Old Town neighborhood, offers a fusion of “new-school” and “old-school” French cuisine. Executive chef Mitchell Acuña describes the restaurant as a blend of contemporary and traditional French cooking, with Acuña representing the “new-school” approach and owner Jason Chan, who also has a chef’s background, embodying the “old-school” style.

A Cozy, Modern Take on French Classics

Acuña explains that Gavroche is a small, intimate space, seating only 25 guests. The restaurant focuses on modern French cuisine, reimagining classic French dishes with a unique and creative twist.
