Hong Kong – Chef Yuda Bustara, known as “a culinary diplomat,” is making waves by introducing high-end Indonesian cuisine in Hong Kong, one of the world’s most dynamic financial hubs.
Yuda, who rose to fame after winning the Netflix culinary competition “The Maverick Academy,” is now showcasing his skills at Luma, a well-known restaurant in Hong Kong. There, he takes both locals and international visitors on a culinary journey through Indonesia’s rich flavors.
Embracing Multicultural Influences
“Hong Kong is a highly diverse city, and my biggest challenge is creating flavors that appeal to everyone,” Yuda shared during an interview at Luma with Jakarta Globe’s sister publication, Beritasatu, over the weekend.
According to Yuda, the city’s unique fusion of Asian and European influences has pushed him to experiment and adapt Indonesian flavors. One of his most memorable experiences in Hong Kong was adjusting the iconic Indonesian sambal, a spicy hot sauce, to suit international tastes.
“I had to keep the sambal authentic, while making sure it was palatable for a wide range of taste buds,” Yuda explained.
Indonesian Ingredients in Hong Kong
Hong Kong is home to a large Indonesian community, which provides Yuda access to essential ingredients like sweet soy sauce and chili peppers. This connection allows him to keep his dishes true to their roots.
For Yuda, the key to success in a multicultural environment lies in his willingness to blend local ingredients with traditional Indonesian cooking techniques. His carabinero gado-gado, for example, is a fusion of local spices and the Indonesian-style salad traditionally served with peanut sauce.
Another popular dish on his menu is the grilled Indonesian chicken. Combining sambal, nasi uduk (steamed rice), and grilled chicken, it has quickly become a favorite among food lovers in Hong Kong.

“I’m proud to promote Indonesian cuisine on the international stage. Each dish I prepare reflects my deep love for Indonesia,” Yuda said.
Through his work, Yuda Bustara continues to highlight Indonesia’s rich culinary heritage, winning the hearts of food enthusiasts in Hong Kong and beyond.
