A new Mexican restaurant, Cinco de Mayo, is set to open in St. Cloud by the end of January, bringing an authentic taste of Tex-Mex cuisine to the area. The restaurant will be located at 4143 W. Division St., filling the space previously occupied by Chinese Phoenix Express, which closed in late November.
While a specific opening date has not yet been confirmed, Cinco de Mayo plans to welcome its first customers in the final week of January.
Entrepreneur Porfirio Sanchez Takes the Leap
Cinco de Mayo marks the first business venture for Porfirio Sanchez, who has spent his career working in the Mexican food industry. After years of experience in various restaurant roles, Sanchez is fulfilling his dream of owning a restaurant.
Sanchez’s career in the restaurant business began at the age of 14, when he started working as a dishwasher. He later worked in the kitchen and as a server, gaining valuable experience over the years. For the past 15 years, Sanchez has worked at various Minnesota restaurants, most recently serving as the general manager at El Tequila in Baxter.
Support from Industry Mentor Pedro Villanueva
Sanchez credits Pedro Villanueva, the owner of El Tequila, for encouraging him to pursue his own restaurant. Villanueva supported Sanchez’s decision to open his business and played a crucial role in guiding him through the process.
“He always told me, ‘When you’re ready, you should open your own place,'” Sanchez said, through his cousin Jose Fuentes, who translated his words into English. “He’s been very supportive.”
Why St. Cloud?
During his time at El Tequila, Sanchez frequently drove from Baxter to Eagan, passing through St. Cloud on his days off. He quickly developed a fondness for the city, believing it to be a great location for his restaurant. The central location made it a perfect halfway point for his travel.
“I drive through this city all the time,” Sanchez explained. “I like it here every time I visit.”
Family Support Drives Success
With the encouragement of Villanueva and the backing of his family, including his cousins, brother, and wife, Sanchez is finally turning his vision into reality. Together, they are working to make Cinco de Mayo a success, bringing a taste of authentic Tex-Mex to St. Cloud.
