The owners behind Copperhead Grille, a popular sports bar with two Lehigh Valley locations, are launching a new restaurant concept this week in Northampton County.
Cousins Michael L. “Junior” Dontas and Michael P. “Senior” Dontas, who run Copperhead Grille in Allentown and Upper Saucon Township, are opening Utopita. The fast-casual eatery, focusing on fresh Mediterranean cuisine, will open on Monday, March 3, at 3650 Nazareth Pike Unit 8 in Bethlehem Township.
A Taste of Mediterranean Cuisine
Utopita, located in the Bethlehem Village Shoppes, offers seating for around 30 guests. The restaurant occupies a renovated space previously home to other tenants.
This marks the cousins’ first venture into the fast-casual dining scene. Utopita will feature a menu inspired by Greek specialties. Customers can enjoy a range of pita wraps starting at $10.99, including the “O.G.,” a mix of shredded iceberg lettuce, beef and lamb gyro, tzatziki, tomato, and red onion.

Yiayia: Hummus, skordalia, spinach spring mix, Mediterranean falafel, quinoa tabbouleh, and more

Signature Bowls and Customizable Options
In addition to pitas, Utopita will serve signature bowls starting at $12.99. The “Bams” bowl, for example, includes roasted lemon potatoes, tzatziki, hummus, quinoa tabbouleh, and pork gyro. The “Spicy Vava” features spicy feta spread, beef and lamb gyro, pickled long hots, and roasted long hots.
For those wanting a personalized meal, the build-your-own options allow customers to select from a variety of spreads, main options, toppings, and sauces. Build-your-own pitas are wrapped in authentic Greek pita, while bowls offer choices like fries, roasted lemon potatoes, or yellow rice as a base.
Appetizers, Sides, and Desserts
The restaurant will also offer Greek-inspired appetizers, such as avgo-lemono soup and mini chopped salad. For those craving something more substantial, there are Greek street fries and spicy feta gyro fries.
For dessert, Utopita will serve Greek frozen yogurt in flavors like chocolate baklava and sour cherry, along with loukoumades, traditional Greek doughnuts in varieties such as honey cinnamon and stuffed Nutella.
A Nod to Greek Heritage
The name Utopita combines “utopia” and “pita,” reflecting the cousins’ Greek heritage. “Utopia is a Greek word, and we were playing with different names like pita and utopia,” explained Michael L. “It just came to me—utopia with a ‘t’ in it.”
Utopita: A New Chapter
The opening of Utopita marks an exciting new chapter for the Dontas family, known for their successful Copperhead Grille locations. Copperhead is recognized for its signature wings, premium burgers, and baby back ribs, as well as its full bar and sports bar ambiance. Utopita, however, offers a lighter, Mediterranean-focused alternative.
Located between Atlantis Aquatics and Callahan Driving School, Utopita joins a variety of other tenants in the Bethlehem Village Shoppes, including eateries like Mitzi’s Table and Sorella’s Pizza & Pasta.
Operating Hours and Services
Utopita will operate daily from 10:45 a.m. to 10 p.m., offering dine-in, takeout, and catering services.
