Ambar, a Balkan-inspired restaurant, is set to open its doors this April in the River North neighborhood. Located at 700 N. Clark Street, in the former Etta space, Ambar will offer a fusion of traditional Balkan flavors and modern dining concepts. The restaurant will provide an unlimited tasting experience that spans over 30 signature dishes, showcasing the diverse tastes of the Balkan Peninsula.
Unlimited Tasting Experience
Ambar will feature an immersive, unlimited tasting experience, where diners can enjoy made-to-order tapas-style plates for one set price. This experience will be available for brunch, lunch, and dinner, allowing guests to explore a wide variety of Balkan dishes. The meal will be guided by table service, enhancing the experience and helping guests discover new flavors.
In addition to lunch and dinner, Ambar will also offer an unlimited brunch on weekends, beginning after the grand opening in late April. This brunch experience will allow guests to relax and savor the unique tastes of the Balkans in a leisurely setting. Ambar emphasizes sustainability, serving small portions in each course to reduce food waste, while ensuring guests can enjoy a range of dishes without compromise.
A Culinary Vision Led by Experts
Ivan Iričanin, the founder and CEO of Street Guys Hospitality, brings his vision to Chicago with Ambar. Under the guidance of Executive Chef Nikola Stefanović and Chef de Cuisine Dustin Musgraves, Ambar’s menu combines modern Balkan flavors with contemporary twists.
Signature dishes include Sarma, a nostalgic Balkan recipe traditionally made with ground beef, but reimagined at Ambar with pork belly, root vegetables, rice, and spices. Another highlight is Ćevapčići, a housemade beef Balkan Kebab served on spicy feta spread. Ambar will also offer updated versions of Balkan classics, such as Stuffed Peppers with orzo, almond velouté, and Tuscan kale, as well as Eggplant Moussaka featuring mushroom ragu and long pepper béchamel instead of the traditional beef and tomato sauce.
Traditional Balkan Ingredients with a Modern Twist
Ambar will source key ingredients traditionally used in Balkan cuisine, such as Kajmak (a Balkan dairy spread) and housemade pork sausages. The menu will also feature spreads like Ajvar, a roasted pepper and eggplant spread, and offer a variety of grilled meats and fresh seafood from regions like Southern Serbia, Montenegro, and Croatia. Ambar’s approachable, shareable format allows guests to experience the diverse flavors of the Balkans.

Beverage Program with a Balkan Touch
The beverage program at Ambar, curated by Serbian sommelier and Wine Consultant Jelena Prodan, will showcase the flavors of the Balkans. The wine list will feature a rotating selection from small Balkan producers, celebrating the region’s winemaking traditions.
The menu will also highlight Rakia, a handcrafted fruit brandy considered the national drink of the Balkans. Rakia is deeply embedded in the region’s culture, symbolizing tradition and hospitality. Ambar will also offer a creative cocktail menu, in collaboration with Serbian-founded UnOrdinary Hospitality. Signature cocktails include the “Ambar Espresso Martini,” the “Welcome to Belgrade,” and the “Skoplje,” each offering unique regional flavors and ingredients.
Additionally, Ambar will feature a happy hour, offering specialty drinks like Raspberry Rosé sangria at discounted prices. These drinks, along with small bites, are designed to complement the rich flavors of the Balkan cuisine.

Ambar is dedicated to providing a welcoming experience for all guests, offering vegan and vegetarian options, along with a separate allergy-friendly menu. Families will also appreciate the kids’ menu, which provides free meals for children under 7.
