SingleThread, the renowned three-Michelin-starred restaurant in Sonoma, is expanding its unique dining experiences across the country. After its successful residency in Park City, Utah, this February, the restaurant is heading to Hudson Valley, New York, in April for its next culinary journey. This marks the third year of SingleThread’s collaboration with the Auberge Resorts Collection and Audi, blending exquisite seasonal cuisine with storytelling.
ThroughLine: A Culinary Journey
SingleThread’s latest dining experience, ThroughLine, offers a 12-course, omakase-style dinner that immerses guests in both food and its deeper connections to global traditions. The most recent residency took place at the Lodge at Blue Sky, Auberge Resorts Collection, an idyllic retreat located just outside of Park City. The event featured not just delectable dishes but also eight short films directed by Emmy-nominated filmmaker Justin Taylor Smith.
The films followed Chef Kyle Connaughton and Head Farmer Katina Connaughton—husband and wife and the driving forces behind SingleThread—as they traveled through Sonoma, Japan, and other regions. The films showcased culinary artistry and the people who sustain food systems worldwide.
A Sensory Experience
During the two-weekend residency, guests were treated to a visual and culinary experience like no other. The eight chapters in the films were displayed on a screen in a private dining room, accompanying the 12 courses. As each chapter unfolded, the pace of the dinner slowed, inviting diners to learn about the farm-to-table process, responsible food sourcing, and the environmental impact of what they were eating.
In one chapter, Katina’s excitement while gathering a giant cauliflower from their farm was shared with diners as they sampled the vegetable alongside black goma and chervil, enhancing the flavor of Czar Nicoulai caviar. Another segment took diners underwater, showing divers collecting sea urchins in Santa Barbara. The scene transitioned seamlessly into a dish featuring the sweet, briny umami of sea urchins paired with rich, buttery abalone.
Behind the Scenes: The Work That Makes It Possible
Throughout the residency, the focus was not only on the ingredients but on the stories and hard work behind them. Chef Kyle Connaughton emphasized that each dish tells a deeper story—one that goes beyond food. “Behind that delicacy is so much important work that’s being done,” he said. This idea resonated through the evening as guests were reminded of the meticulous care required to bring each course to life.
Katina Connaughton discussed how SingleThread’s practices go beyond labels like “sustainable” or “organic.” For her, it’s about a responsible way of living, one that adapts to the land’s real-time needs. “What we’re really doing is just trying to be responsible… we listen to what the land needs,” she said.
A Partnership with Audi and Sustainability
SingleThread’s commitment to sustainability aligns with its partnership with Audi. Launched in June 2024, this collaboration allows SingleThread’s guests to drive Audi e-trons, further highlighting the restaurant’s dedication to responsible and eco-friendly practices. The ThroughLine residency at Blue Sky also included Audi’s all-new, fully electric Q6 e-trons, reinforcing the partnership’s shared values.
As SingleThread prepares for its next residency at Wildflower Farms in Hudson Valley this April, it continues to bring its one-of-a-kind dining experience to new locations. The event will be in partnership with Miele and OpenTable, and it will offer the same immersive, environmental-focused experience that has become synonymous with SingleThread’s dining philosophy.
