Suraj Pathak, a well-known restauranteur in Nottingham, is expanding his culinary empire with the opening of his first restaurant in Derbyshire. The new eatery will offer a contemporary fusion of Indian food with tapas-style dining, providing a fresh dining experience in the picturesque village of Findern.
Suraj and his son Raman are introducing their innovative Lagan Indian Tapas concept, combining the rich diversity of Indian flavors with the casual, shareable tapas style, ideal for social dining.
The Lagan Indian Tapas Concept
The new restaurant will be located on the banks of the Trent and Merseyside Canal, in a building currently occupied by Nadee. Suraj and Raman will refurbish the space to create the third branch of Lagan Indian Tapas, following the success of their two Nottingham-based restaurants. The family already owns two Lagan Indian Tapas branches in Nottingham, as well as two fine dining establishments.
Suraj, who has extensive experience in the restaurant industry, shared his excitement about the move: “It has long been an ambition of mine to open my own restaurant in Derbyshire, which has become my home and is where my family has grown up. Around 10% of our customers in Nottingham drive over from Derby, and we are confident that once people try the Lagan style of dining, they will be converted to our unique menu of small plates inspired by regional Indian dishes.”
A Focus on Shared Dining and Waterside Dining
The new restaurant and bar, expected to open in April, will feature 100 covers, with 80% of the seating outdoors, making the most of the restaurant’s beautiful waterside location. In addition to a weekly outdoor barbecue, there will be live entertainment and an extensive food and cocktail menu for guests to enjoy.
Raman Pathak, who attended Lees Brook School, explained the concept further: “When people think of tapas, they often associate it with Spanish cuisine. But the idea of ordering many small dishes to share is also popular in Indian culture. Some of our food will be cooked in front of the customer, and we plan to create a casual atmosphere where diners can drop in for a drink or food – or order dishes as they go.”

Lagan Indian Tapas will offer a wide variety of options, from small plates perfect for nibbles to traditional meals. The family aims to cater to all types of customers, offering a light and casual dining experience that contrasts with the heaviness often associated with a typical curry meal. Suraj and Raman are excited to introduce this new dining concept to Derbyshire and are eagerly anticipating the grand opening later this year.
