The team behind Don’s, a popular Prahran wine bar, is preparing to launch Cordelia, a new sustainable seafood restaurant on Rathdowne Street in Carlton. Restaurateur Alex Gavioli, known for his unpretentious approach to dining, is bringing his relaxed, accessible vibe to this sleek, Scandinavian-inspired venue. The new restaurant promises to deliver delicious seafood, pasta dishes, and expertly curated drinks, all while focusing on sustainability.
A Focus on Real Hospitality
Alex Gavioli’s philosophy is simple: “Drink your good wines.” For him, hospitality is about providing real enjoyment without the need for ego or pretentiousness. Gavioli’s approach is evident at Don’s, the venue he opened in 2022, which quickly became a favorite in Prahran thanks to its approachable wine list, easy-going dishes, and dinner party ambiance.
Cordelia marks the next step for Gavioli and his wife, Sarah Freudendal, in their culinary journey. The restaurant will be located on the same Rathdowne Street block as the Hot-Listed Bar Bellamy and its sibling venue, Melitta Next Door.
A Menu Built Around Sustainable Seafood
The centerpiece of Cordelia’s menu will be sustainable seafood. Gavioli and chef Josh Norris (currently at Don’s) are collaborating with Good Fish, an independent group that partners with the Australian Marine Conservation Society. Good Fish helps restaurants source eco-friendly seafood, and Cordelia will reflect this commitment by offering fresh, seasonal catches, including lesser-known species. Other proteins, such as pork, will be sourced from Brooklands Free Range Farms at Carlton Farmers Market, ensuring a conscious, sustainable approach across the entire menu.
While Cordelia won’t have a fixed menu, the offerings will rotate based on the day’s catch and will include pastas, raw dishes, and expertly paired entrees and mains. The wine and cocktail list will be sophisticated but unpretentious, keeping in line with Gavioli’s ethos of accessible luxury.
A Scandinavian-Inspired Space for Relaxed Dining
The restaurant’s design, created by Freudendal, an interior designer, and builder Julian Ross of Bush Built, will showcase sleek Scandinavian-inspired interiors. The space will aim for a minimalist yet inviting feel, with clean lines balanced by warm timber seating and industrial stainless steel. The large windows and soft lighting will create a cozy, welcoming atmosphere, while touches of celadon will add an extra pop of color. The outdoor area will accommodate up to 80 guests at a time.
For a more intimate experience, a spiral staircase will lead diners to a small, exclusive cellar that seats just under 10 people. Here, guests can enjoy a cocktail before or after their meal in a private, cozy setting.
Cordelia’s Opening and Walk-In-Only Policy
Cordelia will be open for lunch and dinner from Wednesday to Saturday and will operate on a walk-in-only basis, except for groups of six or more. The restaurant’s focus on accessibility and ease will make it a great spot for spontaneous visits, without the need for reservations.
With Cordelia, Gavioli and Freudendal are creating a space that blends sustainable dining with an approachable, relaxed atmosphere, offering something truly unique to the Carlton dining scene.
