A new Japanese restaurant, Aji Ramen, will soon fill the spot left vacant by the closure of Budai Gourmet Chinese in the Far North Plaza. However, it will be a few months before the doors open to the public. Aji Ramen, which will specialize in ramen and sushi, aims to bring a new flavor to the area.
A New Venture in a Prime Location
Aji Ramen’s owner, Riwei Zhang, shared with the Journal that the restaurant is expected to open within three to six months. Zhang, a Santa Fe resident with nearly 20 years of experience in the food industry, explained that there were no Japanese ramen restaurants in the area, which influenced his decision to start the business.
Zhang also owns Tokyo Cafe in Santa Fe and Yoshi Mame in Albuquerque. According to him, the owners of Budai Gourmet Chinese are friends of his, and they encouraged him to take over the location due to its “good location.”
Earlier this month, Zhang signed a long-term lease for the space at 6300 San Mateo NE, which was previously occupied by Budai Gourmet Chinese.
Aji Ramen’s Menu and Hours
Aji Ramen will offer a variety of dishes, including ramen, sushi, and teriyaki options. While business hours have not yet been finalized, Zhang anticipates that the restaurant will be open six days a week.
Budai Gourmet Chinese, which had been a local favorite since opening in 2010, announced its closure about a month ago, disappointing many regular customers. Aji Ramen hopes to fill the culinary void left behind, offering a fresh and exciting dining experience for the area.
