SLINGLANDS, N.Y. ( NEWS10 ) — A farm-to-table restaurant in Glens Falls is about to open a second location in the Capital Region. Located in the former Garden Bistro 24 location in Slinglands, Mint will have a soft opening on Tuesday, April 1.
Mint is owned by Johanna Geldern and her daughters Katriel and Cagney Houlihan. In November, Garden Bistro 24 announced it was closing permanently and Mint would move into the space.
“The owner of Garden Bistro 24 and his wife were customers of our Glens Falls location and approached us about converting the space into Mint,” Geldern told NEWS10. “They wanted to leave because of family obligations, so we came to an agreement that we would take over the space and lease it from the owner of the building.”
The Glens Falls location opened on Warren Street in 2022. Mint offers farm-to-table meals, including gluten-free, vegetarian and vegan options.
“The Slingerlands location will feature the same farm-to-table menu as the Glens Falls location,” Geldern said. “We use fresh, organic ingredients and source locally whenever possible.”
Thom Hines is the chef at both restaurants, while Kate Sartin is the kitchen operations manager. Sartin also oversees desserts, specific menu items, retail, farm relations and ordering, Geldern said. Slingerlands’ chef is Caitlin Sive, who previously worked at Nighthawks in Troy.
Dishes on the Mint menu include cheese plates, buffalo cauliflower, chicken schnitzel, pasta, burgers and craft cocktails. You can view the full menu on the Mint website.
As for future expansion, Geldern said they are considering purchasing a farm within an hour’s drive of both locations. “Our vision includes hosting weddings and events, building a commercial kitchen for our growing retail arm and potentially adding onsite lodging so guests can stay and experience farm life firsthand,” she said.
Mint in Slingerlands is currently hiring for a chef and a bartender/server. Geldern said they are also looking to connect with any Capital Region farms that might be willing to work with them.
The Slingerlands location will have limited hours during its first week of operation. Beginning April 8, the restaurant will be open from 1pm to 8pm Tuesday through Thursday and 4pm to 9pm Friday and Saturday. “Once our team is well-trained and patio season begins in mid-May, we will likely expand hours further – possibly adding lunch hours and more days,” Geldern said.
