The plan has been in the works since late 2023, but now Stevie Parle is preparing to launch his new restaurant Town in Covent Garden.
The chef, who has become famous in recent years for his post-lockdown hit dish “Joy”, has now recruited a strong team to help run the new restaurant. Executive chef Olly Pierrepont was previously head chef at Luca and La Trompette, while head chef Andy Bright has worked at Kerridge’s Bar & Grill, Saison and Fera.
There is a strong focus on seasonal British trends here, especially the collaboration with Wildfarmed, as the restaurant will be the first to use Wildfarmed beef.
As for what’s on the menu. Here’s what to expect:
Potato bread with wild beef jus
East Kent asparagus with Mangalica lard and aged cherry vinegar
Sea salt clams, sherry and grass-fed butter
Romney Marsh roast lamb with Chianti and anchovy butter
Morrello cherry pie with cherry stone ice cream
There’ll also be a Town Bar, with drinks made by Kevin Armstrong of Satan’s Whiskers, so the cocktails are sure to be delicious.
