How to Make a Fruit Cake

- 1 Mixing Bowl, Electric Mixer, Spatula For mixing the batter.
- 1 Cooling Rack To cool the cake after baking.
Ingredients
- 1 cup unsalted butter (227 g)
- 1/2 cup light brown sugar (100 g)
- 1/2 cup dark brown sugar (100 g)
- 3 amount large eggs
- 3 tablespoons brandy plus extra for brushing the cake
- 1 amount orange juiced and zested
- 1 amount lemon just the zest
- 3/4 cup ground almonds or almond meal (177 mL)
- 1 cup chopped mixed nuts (such as hazelnuts, walnuts, pecans, or almonds)
- 1 pound chopped candied fruits (dried apricots, candied cherries, candied zest, figs, prunes, dates)(680 g)
- 3/4 pound mixed dried fruit (such as raisins, sultanas, currants, dried cranberries)(340 g)
- 2 cups all-purpose flour (240 g)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
