Shrimp Fried Rice
Shrimp fried rice is a quick and delicious meal that you can make in just 20 minutes. Here's a simple recipe for you to follow:

- 1 cup of cooked and cooled white rice (day-old rice works best)
- 1/2 pound (about 225 grams) of large shrimp, peeled and deveined
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1/2 cup of frozen peas and carrots (you can also use fresh vegetables if you prefer)
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 1 teaspoon of sesame oil (optional)
- Salt and pepper to taste
- Green onions, chopped, for garnish (optional)
Prepare the Shrimp:
Season the shrimp with a pinch of salt and pepper.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
Scramble the Eggs:
In the same skillet, add the remaining tablespoon of vegetable oil.
Add the minced garlic and cook for about 30 seconds until fragrant.
Push the garlic to one side of the skillet and pour the beaten eggs into the other side.
Scramble the eggs with a spatula until they are fully cooked and then mix them with the garlic.
Add Vegetables and Rice:
Add the frozen peas and carrots (or your choice of vegetables) to the skillet.
Stir-fry for a couple of minutes until the vegetables are heated through.
Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 2-3 minutes, allowing the rice to heat up and absorb the flavors.
