Shrimp Fried Rice

Shrimp fried rice is a quick and delicious meal that you can make in just 20 minutes. Here's a simple recipe for you to follow:

Materials

  • 1 cup of cooked and cooled white rice (day-old rice works best)
  • 1/2 pound (about 225 grams) of large shrimp, peeled and deveined
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1/2 cup of frozen peas and carrots (you can also use fresh vegetables if you prefer)
  • 2 eggs, beaten
  • 3 tablespoons of soy sauce
  • 1 teaspoon of sesame oil (optional)
  • Salt and pepper to taste
  • Green onions, chopped, for garnish (optional)

Instructions

Prepare the Shrimp:

  • Season the shrimp with a pinch of salt and pepper.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Scramble the Eggs:

  • In the same skillet, add the remaining tablespoon of vegetable oil.
  • Add the minced garlic and cook for about 30 seconds until fragrant.
  • Push the garlic to one side of the skillet and pour the beaten eggs into the other side.
  • Scramble the eggs with a spatula until they are fully cooked and then mix them with the garlic.

Add Vegetables and Rice:

  • Add the frozen peas and carrots (or your choice of vegetables) to the skillet.
  • Stir-fry for a couple of minutes until the vegetables are heated through.
  • Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 2-3 minutes, allowing the rice to heat up and absorb the flavors.
